                           NETHILI MEEN PULINCHIKA AVIYEL

                               ITEMS
nethili meen------------clean and washed without wine --------1cup
grated coconut---------1cup

turmeric powder---------1pinch
chilly powder-----------2 t spoon
small onion-------------2nos sliced
puli water------1/2 t spoon
pulinchika-------------6nos
curry leaves-------
salt-------

                               DIRECTION
the grated coconut , turmeric powder , chilly powder , small onion , puli this items to grind in a jar for thorans position

Heat a pan pour the above grind masala and add pulinchika , curry leaves , green chilly , salt
and add little water also then stir in well position
add nethili meen 
cook for 10 mints
the NETHILI MEEN PULINCHIKA AVIYEL is ready for taste



How to make chakka meen udachathu


                                                      CHAKKA MEEN UDACHATHU

                         items

chakka (jack fruit)-----------slices in 2 cups
chakka kuru-----------sliced in 1/4cup
 nethili meen------------remove the veins and wash and clean in-----1cup

grated coconut--------1/2cup
turmeric powder-----------1/2 t spoon
sweet fennel--------1/2t spoon
chilly powder -----------1/2 t spoon

ginger neer--------1/2 t spoon
garlic neer ----------1/2 t spoon
pepper powder---------1 t spoon
green chilly ----------2
curry leaves--------
salt---------------


                            Direction

Grated coconut , turmeric powder , sweet fennel , chilly powder , ginger , garlic ,pepper powder , and green chilly ,  to mix this all and grind in a mix jar  well position

In a cooker chakka and chakka kuru add with half glass  water and cook for 5 mints

the washed nethili meen to mix the above grind masala add little salt and little water and cook for 3 mints

open the cooker and add the cooked nethili to mix it
add curry leaves
to mix it all and serve for taste
the CHAKKA MEEN UDACHATHU is ready

                    INGREDIENTS

COLI FLOUR-------------cut in small sizes-----1 cup
big onion--------------- 1 no  sliced
uluva---------------1/4 t spoon
turmeric powder-------1/2 t spoon
garlic---------6 alli
puli-------1/2 t spoon
coconut milk-------1 glass
coconut milk 2nd quality------1 glass
green chilly---------3 nos  sliced
sugar---------1 pinch
tomato -------1
mally leaves-------------
cooking oil-----------1cup
salt------------

                                        PREPARATION

Heat a fry pan pour the cooking oil
then add coli flour and stir in slightly change the color
heat a another fry pan with one t spoon cooking oil then add uluva and mustard stir well
then add turmeric powder , chilly powder , and garlic ,  stir well for 2 mints then grind this items in a mixer and keep it
Heat the another fry pan pour the 3 t spoon cooking oil then add big onion and green chilly stir in brownish color to change add tomato
then add the fried coli flour
then add puli water
add as you need salt also
then add the 2nd coconut milk
stir all in well position then add turmeric powder , ginger , then cook in low flame for 5 mints
now add the coconut milk and sugar
just heat and add the mally leaves close the top and put off the flame
the GOBI KURUMA is ready to serve

how to make idli masala


                            IDLI MASALA

idli ------4 nos  to cut for small pieces each 
big onion-----sliced in one cup
ginger---------1/4 t spoon
garlic---------1/4 t spoon
green chilly --------2
tomato------------1
garem masala---------1/4 t spoon
chilly powder -------------1/2 t spoon
turmeric powder ---------1/4 t spoon
sweet fennel-------1/2 t spoon
mally leaves-------
salt--------------
cooking oil----------3 t spoon
pepper powder-----------1/4 t spoon


Heat a fry pan with cooking oil 
add sliced onion for two three seconds
then add ginger  garlic  green chilly cuts  tomato cuts  stir in well 
then add turmeric powder  chilly powder  sweet fennel  and pepper powder 
add little water
then add garem masala  mally leaves  also
then add little salt also 
now stir in well position close the top and cook for 3 mints 

now the the taste a different type of food 
the IDLI MASALA is ready for serve

                 JACK FRUIT   THODU UDACHATHU

           INGREDIENTS 

Jack fruit thodu----------1 cup (sliced )

jack fruit chavini--------1cup

jack fruits-----------1 cup  (sliced )

turmeric powder-----------1/2 t spoon
cumin seed -------------1pinch
grated coconut------------1/4 cup
garlic-----------4 alli
ginger---------a small piece
green chilly---------2
pepper powder--------------1/4 t spoon
salt--------------

     DIRECTIONS

In a cooker Jack fruit thodu jack fruit chavini  jack fruits  cook with 1/2 glass of water for 5 mints

grated coconut  turmeric powder  cumin seed  garlic  ginger  green chilly  pepper powder  this items 
grind in a mixi jar 

then add the mixer to the cooked jack fruit 
add the salt for as you need 
just heat for few seconds 
then put off the flame and stir with a wooden mug

                                EGG FRUIT SHAKE

ITEMS

EGG FRUIT----------2
milk--------1/2 litr
sugar----------4 t spoon
cardamom--------2
cold water----------1 glass

PREPARATION

in a mixi jar put the egg fruit with out skin of it 
add sugar  and milk
grind and add cold water and cardamom 
mix and grind well 

the shake is ready to serve

china clove---------100gm
sugar---------200gm
cash nut--------50gm
kismis-----------50gm


DIRECTION

Remove the skin from egg fruits
make juice from juice maker 
add sugar to mix

then heat this juice in a low flame for 5 mints

take another vessel with china clove to melt

when the egg fruit boiled then add the china clove liquid
stir well
put off the flame
take in a plate and decorate the cash nut and kismis

few time after keep in refrigerator for cool

serve at cool the EGG FRUIT PUDDING

how to make white pathiri


                               WHITE    PATHIRI

                    INGREDIENTS

PACHARI RICE-----------1cup

grated coconut-----------1/2 cup
salt--------------

                    PREPARATION 

The pachari rice to keep one hour in water for kudirkan 
then remove the water and grind in a mixi jar to make the powder size for appam's positions 

take vessel in rice powder add the grated coconut and as you need salt 
then add some water to mix and loose  the rice and stir in appam's level 

Heat a appa pan 
spread little cooking oil
pour one spoon rice liquid 
take and round the pan full side in thin size
close the top 
cook all liquid in this model

the nice WHITE PATHIRI is ready to taste

Soya beans --------------1cup

ginger---------1/2 t spoon
garlic----------1/2 t spoon
small onion----------2

                        Preparations

Heat a cup of water and insert the soya beans in water for one hour 

ginger  garlic  small onion  cardamom  clove and   cinnamon  to grind in a mixi jar 

after one hour take the soya beans from out of water 

in that soya beans to mix the above masala  then add the turmeric powder   chilly powder  
sweet fennel  and as you need add salt also to mix well and keep to set for 10 mints 

Heat a fry pan 
pour the cooking oil
put the pasted soya beans to fry 

now the taste  fried  SOYA BEANS  is ready to serve

big onion----------1 (sliced )

coriander powder-----1 t spoon

HOW TO PREPARE

karimeen  clean and wash well  and remove the waste inside of it
then scrap up on it

turmeric powder  pepper powder  and  salt  to mix with the karimeen and fry in half  cook

Heat a fry pan  pour the cooking oil 
add ginger  big onion  tomato  and  green chilly   stir in well position
then add kudam puli  salt  turmeric powder  pepper powder  turmeric powder  coriander powder
and chilly powder to add and mix well
add little water also
then heat up to dry the water

take a banana leaves  keep the masala on it
the fish put up on
again the masala kept up on the fish
cover the leaves
then fry in a pan
the both side can fry it will be take to fry in 10 mints

How to make nan khatai



                                                     NANA KHATAI

 Maida flour-----1 cup
sugar------------1/4 cup (powder type)
cardamom----------1/4 t spoon
butter -------50gm


preparation


Maida  sugar  butter  cardamom  to mix in the normal position
and make a small boll sizes

then heat in a oven 180f heat   for 12 mints

PREPARATION

pour the cooking oil one t spoon
then add grated coconut
add cardamom,sugar,cash nut,and kismis.to add mix it well

then this mix to fill all in the above opened bananas each and same quantity

mix the rice powder with water and dip the filled bananas to it

Heat another fry pan with the balanced cooking oil
and fry the dipped bananas fry in both side

INGREDIENTS

AYALA FISH --------------2 ( wash and clean then scratch on that panel )

turmeric powder-------------1/4 t spoon

How to make chukappam



                                                        CHUKAPPAM

                   INGREDIENTS

FRIED RICE POWDER-----------1/2 kg
egg-------------2
coconut milk-----------------3 cup
ellu ( à´Žà´³്à´³് ) 2 t spoon
water-----------
salt-------------------
cooking oil---------------1/2 kg

                   DIRECTIONS

Heat a vessel with coconut milk and add two glass of water
add salt as you need

The rice powder can mix and stir coconut milk pour the milk in slowly
add egg , ellu ,  and mix well in without water if you need u can add two t spoon cooking oil

then the dough can make a small boll size press with palm
do all the dough like this

Heat a fry pan
add cooking oil
then put the made bolls to all
the 5 to 10 mints will need to fry all do

the CHUKKAPPAM  is ready to taste

Wheat flour-------1 cup

add green chilly , ginger , garlic , and big onion stir with little salt

Pachari--rice powder -----1/2kg
grated coconut----------1cup
sugar---------300gm
cardamom----1/2 t spoon powder type


DIRECTION

The rice powder should need to be very  soft  so

Heat a vessel in stove
pour the rice powder
mix grated coconut
and stir in well
and fry to one hour  it should be very grow in mature

then keep to cool the fried rice

add 1/2 glass water to it

now add the cardamom powder to fried rice
then add the sugar liquid pour on it

How to make jambakka jam



                                           JAMBAKKA JAM

INGREDIENTS

Jambakka------------1/2kg
sugar ----------1/2kg
lemon juice----------1/2 t spoon
clove -------2 piece

DIRECTION

Jambakka wash and clean then remove the kuru inside of it

then cook for 10 mints with 1/2glass of water
after cook keep to cool
then make the grind from juicer without adding water

Heat a fry pan
pour the juicer jambakka
add the sugar and boiled in well position
and stir the things add clove
the juicer will come thick then add lemon juice also
the thick dough can keep to cool and put off the stove

How to make arabian chocken majboos





                                               ARABIAN CHICKEN MAJ BOOS

              INGREDIENTS

Biriyani  rice  -----------3 cup
chicken ------------1/2 cup
lemon------1 t spoon ( dry and powder type )

turmeric powder---------2 t spoon
cumminseed--------
cardemom
clove
cinnamon
this above items each one t spoon

garlic----------1 t spoon
biriyani masala-----1/2 t spoon
garlic----------1 t spoon
pepper powder------------1 t spoon
salt----------
lemon juice---------1/2 t soon

big onion sliced-----------2 cup
green chilly------5
ginger------------1 t spoon
garlic---------1 t spoon
lemon powder--------1/2 t spoon

tomato ------1  1/2 cup ( cook then make a paste type  )

cooking oil---------------7 t spoon

tomato------------2 nos
pepper----------10nos
boiled egg-------4 nos

                      DIRECTIONS


Chicken to mix with lemon powder 1/2 t spoon
and turmeric powder 1 t spoon mix well then mix to cumin seed , cardamon , clove ,cinnamon ,
mix all this above powder well
then garlic one t spoon masala 1/2 t spoon , sliced garlic 1/2 t spoon
one t spoon pepper powder , as you need salt , and lemon juice also mix well
then mix two t spoon cooking oil mix well position and keep to set 1/2 an hour

Heat a vessel pan
add 5 t spoon cooking oil
then add two cup big onion and stir well
the color will change slitley  
then add green chilly cuts , ginger , garlic , one t spoon each
then add turmeric and turmeric powder 1/4 t spoon , chilly powder 1/2 t spoon
masala powder 1/2 t spoon,
then add lemon powder 1/2 t spoon

after few seconds add the past of tomato 1  1/2 cup

the add the washed and clean sliced Chicken pieces
stir well conditions

and fill the full piece of two tomato keep center of the vessel inside
close the top tightly and cook for 10 mints

then open top and take the chicken pieces outside and mix the cinnamon , cardamom ,
pepper ,

now the rice fill the above vessel and add 6 cup of water
and cook for sharp 20 mints  in low flame

now set the dish

keep the rice  and fill the boiled egg and fill the chicken step by step
and keep the tomato top of it

serve at hot the ARABIAN CHICKEN MAJBOOS is ready

How to make Oralappam



                                                        ORALAPPAM

           ITEMS

FRIED RICE POWDER--------------1/2 kg
egg------------2
coconut milk----------3 cup
ellu--------------2 t spoon
salt--------
water----------
cooking oil------------1/2kg

                             PREPARATION

Heat a vessel with coconut milk
add two cup of water
add as you need salt also

The fried rice powder take in a vessel and pour the coconut milk slowly and stir it well
up to light shadow of rice

add ellu ( à´Žà´³്à´³് ) and in mix well position without adding water
but if you need add 2 t spoon cooking oil for wet

                         INGREDIENTS


rice powder--------------1 cup
small onion-------------1/2 cup  (  sliced  )
green chilly ----------4 no--cut in round shape
curry leaves---------
turmeric powder-----------1 pinch
chilly powder------------1/4 t spoon
sweet fennel powder-------------- 1/4 t spoon
egg--------1
grated coconut----------1/4 cup
salt--------
cooking oil-----------1 cup


                DIRECTION

To mix rice powder with small onion , green chilly , curry leaves , turmeric powder , chilly powder  , and sweet fennel ,  mix and stir in well positions

then add grated coconut , with egg also then stir and mix well

add as you need salt also

remember the rice powder dint to loose  so add a little water as you need
it will be unniyappam type

now Heat a  Kuzhiyappam chatti 
fill the cooking oil
and fill the mixed flour each spoon in the chatti
it will take 5 mints time to cook
cook like this all flour
each cooking every 2 mints the second side to cook

fry all

How to make Nellikka Achar







                              NELLIKKA   ACHAR

INGREDIENTS

Nellikka chopped in small sizes-------------1 cup
Turmeric powder----------1/4 t spoon
Salt---------------
Oil  ( nallenna )
Khayyam-----------1 t spoon
Uluva podi 1 t spoon
Chili powder---------------2 t spoon

                            PREPARATIONS

Nellikka mix with turmeric powder and add water as you need
Then cook for five or ten mints In low flame
Heat a fry pan with oil
Then add Khayyam uluva chili powder and as you need salt also
Stir and mix well  then keep to set for one day
The second onwards you can serve the NELLIKKA ACHAR

INGREDIENTS

CHICKEN -----------------1 KG
Turmeric powder -------------------1/2 t spoon
Chilly powder-------------2 t spoon
Pepper powder-----------------2 t spoon
Gram masala-----------1 t spoon
Curry leaves---------------
Big onion chopped pieces   ( it should be fry with oil )----1/2 kg
Salt-----------
Cooking oil-----------2 t spoon

DIRECTIONS

Washed and clean then cut in medium sizes chicken
Then add the turmeric powder, chili powder , pepper powder , gram masala , little curry leaves , fried onions and as you need salt
These items to add and mix well with chicken pieces to keep to set for 2 hours

w heat a vessel with cooking oil
Then add the above mixed chicken pieces to cook for half an hour’s in low flame with closed top and stir in-between after that time put off the stove
The tasty CHICKEN SHOO is ready to serve
